I bought too much squash, of several varieties, from the frmrs mkt in late summer/early fall. Luckily found recipes for "tian", which I'd never heard of. Made 4 batches & froze in meal size portions. Sauteed onion on the bottom, 3 types of squash, potato, & tomsto; cheese toward end of bsking. Here are before & after pix of first batch.

Looks yummy. I always want to do different recipes with squash, but end up grilling it most of the time. I mostly get zucchini, which can rot pretty fast if you don't use it soon.

I mix it in chicken/veggie stir fries, omelettes. I don't like it raw.

I'm not a soup person, so squash soup holds no interest for me. I also don't own a food processor.

This looks good.

MM - I put it in scrambled eggs also, but really like that I found a way to freeze so that it's ok.
